Baat — A Kumaoni dish served with steamed rice


We present to you a lesser-known but a mouth-watering delicacy from Kumaon. “Baat” is a perfect dish that can be had either in lunch or dinner.



INGREDIENTS


Capsicum                1 big

 Radish                     1 medium
(preferably Pahadi mooli)                     

French beans          250 gms

Potatoes                   2 medium size

Ridge gourd            250gms              
(Turai)

Curd                        1 cup

Rice flour               2 tsp

Turmeric                ½ tsp

Cumin                     ½ tsp

Green chilies          3-4

Refined oil              2 tsp     

Salt                          as per taste

METHOD


Peel, cut and wash vegetables.

Heat oil in a pan. Temper with cumin and small pieces of green chilies.

Add vegetables, turmeric, salt and cook covered in slow flame till done.

Beat curd, rice flour and 1 cup water properly.

Cook this mixture with vegetables stirring constantly till it boils.

Cook for 10 minutes.

Add water as per required consistency and cook again.

Garnish with finely chopped coriander leaves.

Serve hot with steamed rice.
